puff

This is a post for Ruby. It also a post for my oma. She gave me the recipe for Squash Puff in her neat lil grandmother writing. Although the recipe is actually my uncle's mother's. Same generation, anyway.


SQUASH PUFF

3 cups mashed, cooked squash (It really does not matter what kind although I know the masses prefer butternut for whatever reason)
1/2 cup chopped onions
2 tbsp butter (or olive oil)
2 eggs, beaten
1/4 cup milk (unsweetened soy milk or vegetable broth)
3 tbsp flour
1 tbsp baking powder 
Salt and pepper
Bread crumbs

Pre-heat the oven to 375 F. 
 
Peel squash, chop cup and roast or boil until tender. Mash in a large bowl. Sautee onions in either butter or oil or a mix of both until transparent. Add onions to the bowl. Beat in eggs and "milk" until smooth. Stir in flour, baking powder, salt, and pepper. Turn in (apparently this means pour in) to a greased baking dish. Top with bread crumbs (and a few knobs of butter if you are into that sort of thing). 


Bake for approximately 25 minutes or until lightly browned.
